STUFFED BELL PEPPERS MADE FOR THE STARS

Ingredients: 
  • 3 Bell Peppers
  • 0.5 lbs Ground Turkey
  • 3/4 cup Canned Black Beans
  • 3/4 cup Frozen Corn
  • 1 Jalaeño
  • 1 large Tomato
  • 1 Garlic Clove
  • 1/4 Red Onion
  • 2 tbsp Chopped Cilantro
  • 1 tsp Cumin
  • Salt to Taste
  • 9 tbsp Mild Cheddar
  • Water
  • 1 Avocado
Steps:
  1. Heat oven to 350 degrees
  2. In a skillet, brown turkey and season with salt. When browned, add onion, garlic, black beans, cilantro, jalapeño, tomato and cumin. Mix well and simmer on low, covered for 20 minutes. Remove lid, add corn and simmer for 5 more minus or until the liquid is reduced.
  3. Cut peppers in half lengthwise, and put them in an oven proof dish. Evenly distribute the filling amongst all of them. Add water unit the bottom of the dish is covered (about 1/3 c). Cover with foil and bake for 45-50 minus. Remove foil, distribute avocado evenly amongst the peppers and top each with 1.5 tbsp of mild cheddar. Place bake in oven and let cook for 5 more minutes uncovered.

NO-BAKE GRANOLA SQUARES

If you know me, you know that I don't like to put a ton of effort into things if I can help it. I like foods that are simple to make, have simple ingredients, and taste good. I found a recipe for no bake granola bars and thought, "Nice. I don't have to use an oven..." so I clicked on the link and I found that the recipe has about 5 extra ingredients that I didn't have in my cabinets, nor did I feel like getting. I've adapted the recipe to include only what you need! Enjoy :)

Ingredients: 
  • 2 cups of Ground Oats (Put your plain rolled oats used for oatmeal in a magic bullet and grind away until it's like flour)
  • 1 cup of Rolled Oats (Basically keep 1 cup of oats UNground- it keeps the granola bar looking like a granola bar)
  • 1 tablespoon (56g) of Butter (I used Kerrygold Butter- also good for Bulletproof Coffee)
  • 4 tablespoons of Honey
  • 1 teaspoon of Salt
  • 0.5 cups of Stevia (24 teaspoons)
  • 0.5 teaspoons Vanilla Extract
  • 0.8 cups Dried Blueberries (or whatever mix-in you want. I'm going to add chia and flax next time I think...)
Steps:
  1. Melt in a pot: Butter, honey, salt, stevia, vanilla extract.
  2. Mix the melted stuff into the bowl of oats (both ground and unground).
  3. Mix in the blueberries (or whatever)
  4. Pack everything into a greased 9x9 dish (I used a Pyrex glass container). When I say pack, I mean, PACK it all in. You have to really squish all the oats together down into the dish otherwise your bars will fall apart when you cut them and take them out. 
  5. Place in the fridge for ~30 minutes.... Voila! Cut them into 3"x3" squares and there you have it. 
  6. Enjoy.
